Carr's TD pass to Adams was the 50th of his career, which ties him with Mark Barsotti for the sixth-most in school history.
Tyeler Davison had five tackles and one tackle for a loss in the first half to lead the Bulldogs.
Fresno State was outgained 295-247 by the Lobos in the first half. UNM ran for 268 yards on 27 carries, with Kasey Carrier racking up 116 yards on the 'Dogs.
